Broomcorn millet (Panicum miliaceum L.) is not one of the founder crops domesticated in Southwest Asia in the early Holocene, but was domesticated in northeast China by 6000 BC. In Europe, millet was reported in Early Neolithic contexts formed by 6000 BC, but recent radiocarbon dating of a dozen 'early' grains cast doubt on these claims. Archaeobotanical evidence reveals that millet was common in Europe from the 2nd millennium BC, when major societal and economic transformations took place in the Bronze Age. We conducted an extensive programme of AMS-dating of charred broomcorn millet grains from 75 prehistoric sites in Europe. Our Bayesian model reveals that millet cultivation began in Europe at the earliest during the sixteenth century BC, and spread rapidly during the fifteenth/fourteenth centuries BC. Broomcorn millet succeeds in exceptionally wide range of growing conditions and completes its lifecycle in less than three summer months. Offering an additional harvest and thus surplus food/fodder, it likely was a transformative innovation in European prehistoric agriculture previously based mainly on (winter) cropping of wheat and barley. We provide a new, high-resolution chronological framework for this key agricultural development that likely contributed to far-reaching changes in lifestyle in late 2nd millennium BC Europe.
Taste is a major determinant of children's food preferences, but its development is incompletely known. Thus, exploring infants' acceptance of basic tastes is necessary. The first objective was to evaluate the acceptance of tastes and their developmental changes over the first year. The second objective was to compare acceptance across tastes. The third objective was to evaluate global taste reactivity (within-subject variability of acceptance across tastes). Acceptance of sweet, salty, bitter, sour and umami tastes was assessed in three groups of forty-five 3-, 6- and 12-month-old infants using observations based on ingestion and liking scored by the experimenter. For each taste, four bottles were presented (water, tastant, tastant, water). Acceptance of each taste relative to water was defined using proportional variables based on ingestion or liking. Acceptance over the first year only evolved for sweet taste (marginal decrease) and salty taste (clear increase). At each age, sweet and salty tastes were the most preferred tastes. Reactions to umami were neutral. Sour and bitter tastes were the least accepted ones but rejected only when considering liking data. Ingestion and liking were complementary to assess taste acceptance. However, congruency between these measures rose during the first year. Moreover, with increasing age, reactions were more and more contrasted across tastes. Finally, during the first year, inter-individual variability increased for all tastes except salty taste. By enhancing knowledge of the development of taste acceptance the present study contributes to understand better food behaviour in infancy, the foundation of food behaviour in adulthood.
Abstract Cranial lymphatic vessels (LVs) are involved in the transport of fluids, macromolecules and central nervous system (CNS) immune responses. Little information about spinal LVs is available, because these delicate structures are embedded within vertebral tissues and difficult to visualize using traditional histology. Here we show an extended vertebral column LV network using three-dimensional imaging of decalcified iDISCO + -clarified spine segments. Vertebral LVs connect to peripheral sensory and sympathetic ganglia and form metameric vertebral circuits connecting to lymph nodes and the thoracic duct. They drain the epidural space and the dura mater around the spinal cord and associate with leukocytes. Vertebral LVs remodel extensively after spinal cord injury and VEGF-C-induced vertebral lymphangiogenesis exacerbates the inflammatory responses, T cell infiltration and demyelination following focal spinal cord lesion. Therefore, vertebral LVs add to skull meningeal LVs as gatekeepers of CNS immunity and may be potential targets to improve the maintenance and repair of spinal tissues.
Inoculating grape musts with wine yeast and lactic acid bacteria (LAB) concurrently in order to induce simultaneous alcoholic fermentation (AF) and malolactic fermentation (MLF) can be an efficient alternative to overcome potential inhibition of LAB in wines because of high ethanol concentrations and reduced nutrient content. In this study, the simultaneous inoculation of yeast and LAB into must was compared with a traditional vinification protocol, where MLF was induced after completion of AF. For this, two suitable commercial yeast-bacterium combinations were tested in cool-climate Chardonnay must. The time courses of glucose and fructose, acetaldehyde, several organic acids, and nitrogenous compounds were measured along with the final values of other key wine parameters. Sensory evaluation was done after 12 months of storage. The current study could not confirm a negative impact of simultaneous AF/MLF on fermentation success and kinetics or on final wine parameters. While acetic acid concentrations were slightly increased in wines after simultaneous AF/MLF, the differences were of neither practical nor legal significance. No statistically significant differences were found with regard to the final values of pH or total acidity and the concentrations of ethanol, acetaldehyde, glycerol, citric and lactic acids, and the nitrogen compounds arginine, ammonia, urea, citrulline, and ornithine. Sensory evaluation by a semiexpert panel confirmed the similarity of the wines. However, simultaneous inoculation led to considerable reductions in overall fermentation durations. Furthermore, differences of physiological and microbiological relevance were found. Specifically, we report the vinification of "super-dry" wines devoid of glucose and fructose after simultaneous inoculation of yeast and bacteria.
Protein content of any source is classically determined through the analysis of its nitrogen content done for more 100 years by the Kjeldahl method, and the obtained result is multiplied by a number named nitrogen conversion factor (NCF). The value of NCF is related to the amino acid composition of the protein source and to the eventual presence of side groups covalently bound to some amino acids of the protein chain. Consequently, the value of NCF cannot be identical for all sources of food proteins. The aim of this paper is to review the available knowledge on the two allowed protein sources for infant food formulas, milk and soybean, in order to bring the right scientific basis which should be used for the revision of both European legislation and Codex Standard for Infant Formulas.
Effect of aqueous extract of several herbs on human platelet aggregation in vitro was investigated. Out of 28 herbs/nutriceuticals investigated, camomile, nettle alfalfa, garlic and onion exhibited most significant anti-platelet activity (>or=45% inhibition). Aqueous extracts of alfalfa, fresh nettle, and camomile inhibited ADP induced-platelet aggregation by 73, 65 and 60%, respectively, compared with control (P < 0.05). Camomile and alfalfa inhibited collagen-induced platelet aggregation by 84 and 65%, respectively, but nettle could not inhibit collagen-induced aggregation. In contrast, nettle was the most potent inhibitor (66%) of whole blood aggregation induced by collagen, followed by alfalfa (52%), and camomile (30%) compared with control (P < 0.05). None of these three herbs however could inhibit arachidonic acid or thrombin induced platelet aggregation. Camomile and alfalfa strongly inhibited thromboxane B2 synthesis induced by ADP or collagen, but nettle had no effect. Alfalfa and nettle increased cGMP levels in platelets by 50 and 35%, respectively, compared with the control (1.85 +/- 0.23 nM) (P < 0.005). All these data indicate that camomile, nettle and alfalfa have potent anti-platelet properties, and their inhibitory actions are mediated via different mechanisms.
The aim of the present work was to identify and quantify physical mechanisms responsible for in-nose aroma release during the consumption of mint-flavored carbonated beverages in order to better understand how they are perceived. The effect of two composition factors (sugar and CO2) was investigated on both the sensory and physicochemical properties of drinks by studying in vitro and in vivo aroma release. Sensory results revealed that the presence of CO2 increased aroma perception regardless of the sugar content. In agreement with volatility parameters, in vivo measurements showed that carbonated drinks released a greater quantity of aroma compounds in the nose space than non-carbonated ones. CO2 seemed thus to induce large modifications of the physicochemical mechanisms responsible for the aroma release and flavor perception of soft drinks. Moreover, sugar content seemed to have an impact (increase) on aroma perception only in the case of non-carbonated beverages. Sensory interactions were thus observed, in particular, between sweet and aroma perceptions. For carbonated beverages, sugar content had an impact only on aroma release, but not on their perception.
Additive manufacturing of polymer products over the past decade has become widespread in various areas of industry. Using the fused filament fabrication (FFF) method, one of the most technologically simple methods of additive manufacturing, it is possible to produce parts from a large number of different materials, including wear-resistant nylon. The novelty of the work is properties investigation of ±45° filling configuration with different filling degree for nylon, as well as calculating the effect of infill on the strength characteristics, excluding the shell. This article reflects the process of manufacturing samples from nylon using FFF technology with various internal topologies, as well as tensile tests. The analysis of the obtained results is performed and the relationship between the structure of the sample and the limit of its strength is established. To calculate real filling degree and the effect of internal filling on the strength characteristics of the specimen, it is proposed to use a method based on the geometric and mass parameters. The FFF method is promising for developing methods for producing a composite material. The results of this article can be useful in choosing the necessary manufacturing parameters.
Many studies in the fields of law, sociology and management point to the transformation of subordination in the employment relationship. This is often explained by the triangulation of the traditionally bilateral employment relation between employer and employees by the involvement of clients or their representatives in the operational and organizational conditions of work. Such studies rarely distinguish between the various types of clients, nor between the reality and rhetoric of their role and influence. Our objective is to propose a classification of the triangular situations between employer, employees and clients based on the concept of power and to analyse the impacts of clients on conditions of work and employment relations.
Brettanomyces is the major microbial cause for wine spoilage worldwide and causes significant economic losses. The reasons are the production of ethylphenols that lead to an unpleasant taint described as 'phenolic odour'. Despite its economic importance, Brettanomyces has remained poorly studied at the metabolic level. The origin of the ethylphenol results from the conversion of vinylphenols in ethylphenol by Brettanomyces hydroxycinnamate decarboxylase. However, no information is available on the vinylphenol reductase responsible for the conversion of vinylphenols in ethylphenols. In this study, a vinylphenol reductase was partially purified from Brettanomyces bruxellensis that was active towards 4-vinylguaiacol and 4-vinylphenol only among the substrates tested. First, a vinylphenol reductase activity assay was designed that allowed us to show that the enzyme was NADH dependent. The vinylphenol reductase was purified 152-fold with a recovery yield of 1.77%. The apparent K(m) and V(max) values for the hydrolysis of 4-vinylguaiacol were, respectively, 0.14 mM and 1900 U mg(-1). The optimal pH and temperature for vinylphenol reductase were pH 5-6 and 30 degrees C, respectively. The molecular weight of the enzyme was 26 kDa. Trypsic digest of the protein was performed and the peptides were sequenced, which allowed us to identify in Brettanomyces genome an ORF coding for a 210 amino acid protein.
Quels liens entretiennent la crise écologique actuelle et l’esthétique environnementale ? Ce que nous nous proposons de suivre comme piste, c’est que la crise écologique constitue aussi une crise de la sensibilité – une crise de notre sensibilité à l’égard du vivant. Par crise de la sensibilité, nous entendons un appauvrissement de ce que nous pouvons sentir, percevoir, comprendre, et tisser comme relations à l’égard du vivant. Cet article tente d’esquisser la généalogie, à travers la philosophie et l’histoire de l’art, d’un motif central de cette crise, profondément ancré dans notre cosmologie et notre histoire culturelle : l’idée d’une illisibilité et insignifiance du monde vivant.
BACKGROUND: Partition coefficients give an indication of the retention of aroma compounds by the food matrix. Data in the literature are obtained by various methods, under various conditions and expressed in various units, and it is thus difficult to compare the results. The aim of the present study was first to obtain gas/water and gas/matrix partition coefficients of selected aroma compounds, at different temperatures, in order to calculate thermodynamic parameters and second to compare the retention of these aroma compounds in different food matrices. RESULTS: Yogurts containing lipids and proteins induced a higher retention of aroma compounds than model gel matrices. The observed effects strongly depend on hydrophobicity of aroma compounds showing a retention for ethyl hexanoate and a salting out effect for ethyl acetate. A small but noticeable decrease in enthalpy of affinity is observed for ethyl butyrate and ethyl hexanoate between water and food matrices, suggesting that the energy needed for the volatilization is lower in matrices than in water. CONCLUSION: The composition and complexity of a food matrix influence gas/matrix partition coefficients or aroma compounds in function of their hydrophobicity and to a lower extent enthalpy of vaporization.

The collection of early medieval window glass found in the abbey of Baume-les-Messieurs (Jura, France) is exceptional because it dates to the end of the eighth century, and due to the number of fragments as well as their state of conservation. Different colours and forms have been identified. These pieces are a rare opportunity to address the glass craft, its recipes and techniques for a phase of its history that has remained little known. Analyses in PIXE–PIGE prove that, in addition to fragments from two soda glass items, the pieces are made from wood-ash glass. Most of them probably came from the same production and the raw material is present in the region. At this early stage of wood-ash glass production, the glassmakers had mastered the glass as well as the colour processes.
(23)Na NMR spectroscopy has been used to study the effects of Na(+) ion concentrations on the structure of 1% (w/w) iota-carrageenan systems, a natural gelling polysaccharide used as a thickener in the food industry. Rheological and (23)Na T(1) relaxation time measurements revealed that gel formation correlates with decreases in ion mobility over the range of 0-3% (w/w) sodium content. (23)Na single-quantum (SQ) and double-quantum-filtered (DQF) NMR experiments performed on these systems provided evidence for a 'bound' sodium ion fraction in a specifically ordered environment. These results have allowed us to propose a model for the carrageenan gelation mechanism in the presence of Na(+) ions.
Abstract Purpose – The article aims to cast a novel light on the extended theoretical conceptualisation of corporate citizenship, in as far as it criticises the insufficient embedding of international corporate social responsibility (CSR), corporate social performance (CSP) and sustainability initiatives in the geopolitical reality and conflictuality of the global business environment. Design/methodology/approach – The article offers a unique interdisciplinary take on relevant research in international CSR, political science, international relations and philosophy. Its methodology is based on a literature review of these different fields. Findings – The article argues that the rules‐based nature of international CSR is based on experience in the relatively benign market context of high‐income economies. However, the transposition of the code‐and‐compliance approach to the more conflictual context of emerging markets leads to the failure of international CSR. Its insufficient catering to the particular pressures exerted on operation in these markets reveals an idealist bias. This explains the implicit endorsement of "end‐of‐history" scenarios and other neo‐liberal assumptions in international CSR. The article argues that this disposition does not pay credit to the need to find adequate responses to the situation. Quite to the contrary, the firm entrenchment of (neo‐)liberalism in the mental mapping of CSR blocks the way to an exploration of realist alternatives. The article concludes by suggesting a shift in the CSR research agenda, from rules to institutions and agency. It proposes historical material on leadership in emergency situations and a new reading of Machiavelli to illustrate possible avenues. Research limitations/implications – The article is based on a qualitative review and discussion of the literature, which it presents in a new light. It does not present empirical or quantitative research data. It points to a conceptual abyss separating the theory and reality of international CSR. This is particularly problematic in the light of recent deliberative models positing a "new political role" for the corporation. While this article follows the new model in its criticism of the traditional separation of politics and business, it advocates that further research is necessary to elucidate how a more realistic apprehension of global conflict and its impact on business can be combined with the "arms reach principle". Furthermore it urges that a new model must factor in the frequent "dirty hands" problems occurring in international business. Practical implications – The article argues that, contrary to the dominant liberal discourse in business ethics and CSR, an increasing potential for Machiavellian behavior in the corporate sector is to be expected. This is due to the absence of arbitrages, in an environment experiencing a rapid expansion of global corporate activity. This renders "code‐and‐compliance" CSR ineffective. The article recommends the "reframing" of CSR, to specifically include "dirty hands" issues. Social implications – One stumbling block to a correct understanding of the contemporary challenges impacting international business operations is the (neo‐)liberal globalisation paradigm ‐ a narrative in whose manufacture business schools and management scholars are complicit. Originality/value – The article contributes to the discussion on "systemic CSR". The fundamental nature of the critique, as well as its interdisciplinary orientation and original recommendations, make the contribution unique.
OBJECTIVES: Depicting past epidemics currently relies on DNA-based detection of pathogens, an approach limited to pathogens with well-preserved DNA sequences. We used paleoserology as a complementary approach detecting specific antibodies under a mini line-blot format including positive and negative control antigens. METHODS: Mini line blot assay incorporated skim milk as negative control, Staphylococcus aureus as positive control, and antigens prepared from lice-borne pathogens Rickettsia prowazekii, Borrelia recurrentis, Bartonella quintana, and Yersinia pestis. Paleoserums were extracted from rehydrated dental pulp recovered from buried individuals. Mini line blots observed with the naked eye, were quantified using a scanner and appropriate software. Paleoserology was applied to the indirect detection of lice-borne pathogens in seven skeletons exhumed from a 16th-17th century suspected military burial site (Auxi-le-Château); and 14 civils exhumed from a 5th-13th century burial site (Saint-Mont). Direct detection of pathogens was performed using quantitative real-time PCR. RESULTS: In Auxi-le-Château, paleoserology yielded 7/7 interpretable paleoserums including 7/7 positives for B. recurrentis including one also positive for B. quintana. In Saint-Mont, paleoserology yielded 8/14 interpretable paleoserums and none reacted against any of the four pathogens. Antibodies against R. prowazekii and Y. pestis were not detected. The seroprevalence was significantly higher in the military burial site of Auxi-le-Château than in the civil burial site of Saint-Mont. Real-time PCR detection of B. quintana yielded 5/21 positive (3 at Saint-Mont and 2 at Auxi-le-Château) whereas B. recurrentis was not detected. CONCLUSIONS: Paleoserology unmasked an outbreak of relapsing B. recurrentis fever in one 16th - 17th century military garrison, missed by real-time PCR. Paleoserology offers a new tool for investigating past epidemics, in complement to DNA sequence-based approaches.
Les études des bois gorgés d’eau découverts sur vingt sites archéologiques localisés à Clermont-Ferrand (Puy-de-Dôme) ont pour objectif de mettre en évidence des pratiques sylvicoles liées aux besoins en bois d’œuvre au cours du développement urbain de la ville d’Augustonemetum durant l’Antiquité. Le croisement des trois disciplines, xylologie, dendrologie et dendrochronologie, est réalisé pour identifier les essences des bois issus des fouilles archéologiques, dater ces derniers quand le nombre de cernes le permet et évaluer la morphologie et l’âge de l’arbre lors de son abattage. Sur cette base, il est possible de percevoir une évolution dans l’approvisionnement en bois et son utilisation, ainsi que dans la composition et la structure des peuplements forestiers exploités. Cette évolution permet de dégager certains traits des pratiques sylvicoles pour ce contexte antique.
1-14C linoleic acid intestinal absorption and simultaneous biochemical events were followed up on rats under vascular perfusion and on main mesenteric lymphatic duct fistulated rats. 1-14C linoleic acid was introduced in the duodenum alone in doses from 1.2 to 90 mumol or in the presence of oleic acid and monopalmitin (30/30/30 mumol/mumol/mumol). Mesenteric portal venous blood and chyle, respectively, were collected continuously for 1 and 6 h after the infusions. Blood-labeled lipid recovery varied from 4.7 to 2.2% of the 14C linoleic acid infused as the 14C linoleic acid dose infused increased, and dropped to 1.8% with the mixed lipid infusate. Lymph-labeled lipid recovery increased from 25.7 to 31.8% of the 14C linoleic acid infused as the dose infused increased, and rose to 48.1% with the mixed lipid infusate. The oxidation of 1-14C linoleic acid remained low: 0.8-3% of the infused radioactivity. A desaturation and elongation of 14C linoleic acid into 14C arachidonic acid was detected and discussed. We can conclude that the linoleic lymph absorption pathway remained preferential in our experimental conditions, simultaneous to a low rate of oxidation and an eventual ability for the enterocyte to convert this essential fatty acid arachidonic acid.
