Biotechnological aspects of the modification of secondary collagen-containing raw materials – tripe for the production of cost-effective functional meat products

The paper presents the scientific justification for the creation of a food product, that can satisfy the physiological needs of a person in the necessary energy, as well as the functional nature, created taking into account the nutritional value of food. The authors have chosen a method of limiting chemotaxis – the process of directing bacteria to the attractants, thereby preventing the development of microorganisms. The selected source of structural collagen protein – tripe, was cleaned and ground in a meat grinder, treated with diocide (dimethyl sulfoxide (DMSO) + sodium chloride or (CH3)2S = O + NaCl), introduced into sausage mince in exchange for lard. Mince was grinded and packed into protein shell, fried, boiled, and smoked. Obtained semi-smoked sausage product became more stable in storage than boiled sausage because it contained less moisture, had a high nutritional value and functionality. DMSO has been proven to have antioxidant effects. It prevents the oxidation of lipids by H2O2 and inhibits free radicals such as OH.

Antioxidant Activity of Bio-extract which Obtained from Hazelnut Shells and Green Leafy Covers

The article presents the findings of an antioxidant activity assay conducted using 70% ethanol and deionized water on extracts from green leafy covering (GLC) and hazelnut hard shells (HS) that are grown in the northwest of Azerbaijan. The kinetics of each extract were examined using a UV-2700 vis spectrophotometer, and the DPPH (2,2-Diphenyl-1-picrylhydrazyl) technique was used to determine the extract's free radical scavenger activity. The results show that the bio-extracts obtained in 70% alcohol have radical scavenging activities of FRSA(hs)=59.24% and FRSA(glc)=35.72%, while the bio-extracts obtained in water have radical scavenging activities of FRSA (hs)=31.15% and FRSA(glc)=22.23%. Waste is significant for treatment, affordable, and an effective preventive measure since it is derived from raw resources.

The main property of the soil is its fertility.Fertility is the ability of the soil to provide the plant with nutrients and water, air and heat for its root system.As noted by V.R.Williams, it is important quality that distinguishes soil from mountain rock and defines it as "the upper horizon of the dry surface of the earth capable of yielding a plant".The development of soil and soil cover, as well as the formation of its fertility, is closely related to the harmony of the natural factors of soil cultivation and the various effects of human society, the development of its productive forces, economic and social conditions.

THE THIRD STAGE OF THE DIFFUSION PROCESS OF FISETIN MOLECULE IN THE FIBROIN FIBER

The previous article stated that the diffusion of the dye continues until it reaches an equilibrium concentration in the entire volume of the fiber.This period was mentally divided into three stages: 1) adsorption of fisetin molecules on the surface of fibroin fibers; 2) moment when fisetin molecules reach the center of the fibroin fiber.Since the first stage occurs almost instantaneously, it is almost impossible to separate this stage from the second stage during which the actual dyeing occurs.We combined the first and second stages of diffusion and devoted a previous article to them.The third stage begins after the completion of the second and continues until the equilibrium concentration is restored in the entire volume of the fiber.This article is focused on the third stage of diffusion of flavonoid fisetin molecules in the fibroin fiber.This article also uses a three-dimensional physical model of the diffusion of dyes in the fiber.We established mathematical relations that describe the kinetics of dye diffusion at the third stage of the dyeing process.

In the article, information was given about the Salavat pass located in the territory of Azerbaijan, which played an intermediary role in the formation of relations between Azerbaijan and Dagestan, samples were collected and involved in the research. In this research, the methods of measurement, observation, research and collection of materials were used, and information was given about the soil types, landscape types and their height above sea level.
